Addicted Quick Beef Noodle Mix

This is my current obsession, guys! I promise you won't regret to give it a try 😍

You will need
  • 120 g rice vermicelli noodles
  • 150 g beef (tenderloin)
  • 100 g bean sprouts
  • 150 g bok choy (or greens of your choice)
  • 10 g basil
  • 10 g coriander (chopped)
  • 1 tbsp sesame oil
  • 1 chili (sliced, optional, if you can't eat spicy food)
  • 2 tsp sesame seeds
  • 1/2 tbsp lime/lemon juice
  • The Sauce
  • 5 garlic cloves
  • 4 shallots
  • 1 chili
  • 2 tbsp soy sauce
  • 1/2 tbsp dark soy sauce (use soy sauce if you don't have it)
  • 1 tbsp sugar
  • 1/2 tsp black pepper
  • 1/2 tsp chili flakes
  • 1/4 - 1/2 tsp salt (adjust to your taste)
  • 1/4 cup water
  • Slurry (by combining 1/2 tsp cornstarch with 1 tbsp water)
Instructions

    Bring a pot of water to a boil over medium high heat. Blanch bok choy first for 2-3 mins and transfer to a bowl. Next, add bean sprouts for 30-45 seconds and transfer to a separate bowl.

    Add noodles and cook by following the packet's direction then transfer to a mixing bowl, add sesame oil and mix a little bit to avoid sticking. Set aside.

    Last, cook beef for less than a minute in boiling water (you can add a few slices of ginger too). Transfer the beef to a separate bowl.

    Heat a small sauce pan over medium heat, add 2 tbsp cooking oil. Once the oil is hot enough, add minced garlic, shallots and chili. Stir for about 2 minutes or until it's fragrant. Add the remaining ingredients except slurry and bring it to a boil. Once the sauce is boiled, stir in the slurry and mix until the sauce is thickened. Remove from heat and let it cool down completely.

    Back with the mixing bowl we already had noodles and sesame oil. Now add bok choy, bean sprouts, beef, coriander, basil, chili slices ( if desired) and pour the sauce over. Toss well.

    Add in lime juice and sesame seeds to serve! It's DELICIOUS 🤤
