Drunken Chicken Noodles With Bokchoy

You will need
  • 175 g chicken thighs, or chicken breast (sliced into bite-size pieces)
  • 140 g bokchoy
  • 70 g your favorite mushroom, I used oyster mushrooms
  • 1/2 cup basil leaves
  • 80 g dried noodles
  • 50 g bell pepper
  • 1 chili or less if you can't eat spicy
  • 3 cloves of garlic
  • 2 tbsp cooking oil
  • The sauce
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp fish sauce
  • 1/2 tsp black pepper
  • 2 tsp dark soy sauce (for beautiful a look)
  • 1 tsp rice vinegar
  • 1 tsp brown sugar
Instructions
  1. Place garlic, bell pepper and chili in a mortar and use a pestle to crush to a paste. 

    Prepare the sauce by combining all the ingredients from the list and set aside. 

  2. Heat a frying pan over medium heat, add 1 tbsp cooking oil. Add chicken pieces  and cook 1-2 mins each side over medium heat or until they're golden. Transfer to a small bowl and set aside. 

  3. Bring a pot of water to a boil and blanch the noodles until it's 80% cooked. Rinse under water then set aside. 

  4. Add 1/2-1 tbsp to the pan we cooked the chicken earlier if needed,  add chili garlic paste and stir over medium heat until fragrant about 30 seconds. 

    Bring the heat to a bit higher, stir in mushrooms and cook for 30-45 secs then add in bokchoy. Cook them for 2-3 minutes. 

  5. Reduce the heat to medium, add in noodles, the prepared sauce and chicken. Toss everything evenly for a minute.

    Add basil and remove from heat. Toss  to combine basil with noodles.
