Drunken Thai Shrimp Noodles

Blanch choy sum in boiling water for about 1 minute. Rinse under cold water and set aside.

Place garlic, bell pepper and chili in a mortar and use a pestle to crush to a paste.
Prepare the sauce by combining all the ingredients from the list and set aside.

Heat a frying pan over medium heat, add 1 tsp cooking oil. Place shrimps and cook 45 seconds each side. Transfer to a small bowl and set aside.

It's time to soak rice noodles in a bowl of water for 2 minutes. Transfer to a plate. ( I don't soak it at the beginning cause the noodles will be expanded and soggy )

Use the same pan, add in 1 more 1 tsp of cooking oil with the chili garlic paste. Stir for 30-45 seconds over medium heat.

Stir in carrot for 45 seconds before adding choy sum. Stir them for a minute then add noodles, the sauce and shrimps. Toss well for a minute.
(To avoid noodles stick together, just soak them again in a bowl water for JUST A FEW SECONDS right before you add in the pan 👍)

Add in basil and toss for another minute. Remove from heat and serve! SO SO GOOD 😍
