Drunken Thai Shrimp Noodles

OMG, you gotta try this asap! It's just so good and flavorful.

I was so happy and satisfied having this meal!

You will need
  • 100 g dried wide rice noodles
  • 3 garlic cloves
  • 1 Thai chili
  • 25 g bell pepper
  • 6-8 shrimps (peeled and deveined)
  • 40 g carrot (thinly sticks)
  • 90 g choy sum (any greens you like)
  • 20 g Thai basil leaves
  • A pinch of salt and pepper
  • 2 tsp cooking oil
  • The sauce
  • 1 tsp brown sugar
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp fish sauce
  • 1/2 tbsp dark soy sauce (use soy sauce if you don't have)
Instructions
  1. Blanch choy sum in boiling water for about 1 minute. Rinse under cold water and set aside. 

  2. Place garlic, bell pepper and chili in a mortar and use a pestle to crush to a paste. 

    Prepare the sauce by combining all the ingredients from the list and set aside. 

  3. Heat a frying pan over medium heat, add 1 tsp cooking oil. Place shrimps and cook 45 seconds each side. Transfer to a small bowl and set aside. 

  4. It's time to soak rice noodles in a bowl of water for 2 minutes. Transfer to a plate. ( I don't soak it at the beginning cause the noodles will be expanded and soggy )

  5. Use the same pan, add in 1 more 1 tsp of cooking oil with the chili garlic paste. Stir for 30-45 seconds over medium heat. 

  6. Stir in carrot for 45 seconds before adding choy sum. Stir them for a minute then add noodles, the sauce and shrimps. Toss well for a minute. 

    (To avoid noodles stick together, just soak them again in a bowl water for JUST A FEW SECONDS right before you add in the pan 👍)

  7. Add in basil and toss for another minute. Remove from heat and serve! SO SO GOOD 😍
