Shred potatoes, squeeze out the juice and place in a mixing bowl.
Add in salt, paperika with 1 tbsp of water and mix well. Set aside for 5 minutes.
Heat a large frying pan over medium high heat, add in 2 tbsp of oil.
Add the pancake batter, spread evenly to create a thin pancake ( extra crispy 😉)
Cook until the bottom turns yellow and crispy. Flip over and add the other 2 tbsp oil.
Serve with soy sauce or sriracha mix mayo. SO GOODDD 🤞🌷
