Quick Lunch Shrimp Egg Noodles

Ingredients
  • 100 g noodles
  • 5-6 shrimps (peeled and deveined)
  • A handful of bean sprouts
  • 3 green onions (sliced into 2 inch pieces)
  • 3 garlic cloves (minced)
  • 2 shallots (sliced)
  • 1 egg
  • The sauce
  • 1 tbsp fish sauce
  • 1/2 tbsp soy sauce
  • 1/2 tbsp brown sugar
  • 1/2 tbsp chili flake
  • 1/4 tsp pepper
  • 1/4 tbsp vinegar
Instructions
  1. Blanch noodles in boiling water until it’s 80% cooked. Rinsed and Drained. Set aside.
  2. In a small bowl, combine all the spices and sauces and set aside.
  3. Heat a frying pan/ wok over medium high heat. Add cooking oil, shallot and garlic. Stir until it’s fragrant and golden.
  4. Add shrimps and stir for 30 seconds before adding 1 tbsp the prepared sauce. Cook for a minute and pull it to a side of the pan. Crack an egg and scramble it.
  5. Bring in the noodles, bean sprouts, green onions and the remaining sauce. Toss well for 1-2 minutes. (Add chili slices if desired)
  6. Transfer to a serving plate and enjoyyyy. I love this yumm 😭😭
