Quick Spicy Sour Shrimp Stir Fry Noodles

Hey hey, you need to try this noodles it's my recent favorite meal.

Remember to squeeze some lime before digging in okay :)

You will need
  • 150 g shrimps (peeled and boiled)
  • 2 tbsp chopped coriander
  • 1 tsp sesame seeds
  • 1/4-1/2 tsp chili flakes (skip if you don't like it spicy)
  • 120 g dry noodles
  • 1/2 lime
  • 2 tbsp cooking oil
  • 1 egg
  • 1 1/2 tbsp sliced shallots
  • 2 tsp minced garlic
  • The sauce
  • 1 1/2 tbsp soy sauce
  • 1/2 tbsp dark soy sauce
  • 1 tbsp brown sugar
  • 2 tbsp water
  • 1 tsp sesame seeds
  • 1 tbsp sesame oil
Instructions
  1. Place noodles into a big bowl and pour the water. Leave it for about 10-15 mins it depends on which type of noodles you are using. Check the noodles, make sure it's not soggy or too soft. Drain. (The cooking process needs to start immediately otherwise the noodles will be expanded or it's be dried again)

  2. Preparing the sauce by combining all the ingredients in the list and set aside. 

  3. Heat a frying pan/ a wok over medium high heat, add cooking oil then shallots and garlic. Stir until fragrant about 1-2 mins. 

  4. Crack an egg and scramble it for 20-25 seconds, add in the noodles and toss well constantly for about 1-2 mins. ( don't over cook it) It's ok if the noodles seem stick together, keep cooking!

  5. Add shrimps, coriander ( reserve some for garnish ) and the sauce. Toss quick to combine everything and the noodles are coated with the sauce evenly. Check the noodles, make sure it's cooked!

  6. Sprinkle sesame seeds, chili flakes, coriander and squeeze some lime to serve! So so good!🥰
