Cook the tagliatelle as the packet's direction then transfer to a bowl. Add in 2 tsp olive oil and toss. Set aside.
In a small bowl, combine egg yolks and parmesan. Set aside.
Heat a frying pan over medium heat, add cooking oil, garlic and chili oil. Stir for about 3o seconds and then add in tomato paste. Stir for another 30 seconds and then put diced tomato and water. Bring it to a boil.
Once it's boiled, add soy sauce, salt and black pepper. Stir and cook for another 30 seconds.
Place tagliatelle, egg yolk mixture, chopped green onions and more chili oil if desired. Toss well and remove from heat.
