Spicy Lemongrass Chicken Bites

A friendly reminder: you should prepare rice before making this delicious dish because it's the perfect combo!

You can adjust the spiciness as the way you like, I am from the center of Viet Nam so I can eat spicy food quite good.

Cooking Method

You will need
  • 350 g chicken thighs (sliced into bite size pieces)
  • 4 lemongrass (minced, white parts only)
  • 1 1/2 tbsp minced garlic
  • 1 chili (use less if you can not eat spicy)
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • 2 tsp dark soy sauce (use a bit more for darker color)
  • 1 tbsp oyster sauce
  • 1/2 tsp black pepper
  • 3-4 lime leaves (stem removed to avoid bitterness)
  • 2 tbsp cooking oil (or you can use chicken skin like me)
Instructions
  1. In a mixing bowl, place chicken with fish sauce, sugar, black pepper, dark soy sauce, half garlic, half lemongrass and half chili. Combine everything and let it sit for at least an hour. 

  2. Heat a frying pan over medium heat, I use chicken skin instead of oil. I cook the skin until it released some fat. I don't eat the skin parts so I remove it from the pan, just keep the fat (oil). Then add in the remaining garlic, lemongrass and chili. Stir for about a minute, or less!

  3. Stir in the marinade chicken, let it sear a bit, you can add some more dark soy sauce if you want the darker color for the dish. Cook for about 2-3 minutes then remove from heat. 

  4. Sprinkle thinly sliced lime leaves on top and serve over rice, so good and spicy :)) haha!
