Spicy Vegetable Stir-Fry Noodles With Fried Chicken

Oh wow, there was a day I did not know what to eat. I had some vegetables in the fridge and a small piece of chicken breast in my freezer. I made this spicy noodles with not much expectation but WOW It came out so delicious and I have to share with you.

Spicy Vegetable Stir-Fry Noodles With Fried Chicken

You will need

Fried Chicken Breast

Instructions

  1. Put chicken breast into a shallow plate with garlic powder, onion powder, salt and black pepper. Leave it for at least 15 minutes.

  2. Bring a pot of water to a boil and cook the noodles by following the packet's directions. Rinse under cold water and set aside. 

  3. Heat a frying pan over medium heat, add 1 1/2 tbsp cooking oil with minced garlic and chopped green onions. Give it a few stir until fragrant. 

    Add chili powder and stir for 30 seconds before adding onion. 

  4. Cook the onion for a minute then add carrot and cabbage. Quickly toss everything then add soy sauce, oyster sauce, sugar, black pepper and rice vinegar. 

    Stir to combine everything. 

  5. Add noodles and toss well for a minute, more or less. You can add some dark soy sauce to get darker noodle look if you prefer. I used some, it's so great 😍

    Remove from heat and set aside. 

  6. Now we make fried chicken!

    Heat a small frying pan over medium heat and add 5 tbsp cooking oil. 
    Add flour to the chicken bowl and coat well, transfer the chicken into the whisked egg bowl then finish with breadcrumbs. 

  7. Place the chicken into the pan and fry over medium low heat until the bottom turns golden brown, flip to cook the other side. 

    Once the chicken is cooked, transfer to a chopping board and let it cool down. Slice into bite sized pieces!

  8. To serve, place the noodles onto a plate then fried chicken slices, sprinkle chopped green onions and drizzle some sesame oil on top.
