Cooking Method
Servings 3
Ingredients
  • 600 g pork ribs
  • 2 shallots (minced)
  • 5 garlic cloves (minced)
  • 1 tbsp ketchup
  • 1 tbsp sriracha (or any chili sauce)
  • 1/2 tsp pepper
  • 1/2 tsp brown sugar
  • 1 tbsp white sugar
  • 1 1/2 tbsp fish sauce (or soy sauce if u don’t have)
  • Fresh chili, green onion for garnish
  • 600 ml water (separated)
  • 4 tbsp cooking oil
Instructions
  1. Place the ribs in a boiling water pot, keep it boil for about 3 mins then remove. Rinse under the water. Pat dry and fry them in a frying pan over medium high heat with 4 tbsp of cooking oil until they’re golden brown. (Don’t cook it too long). Transfer to bowl.
  2. Add minced shallots and garlic. Fry until they lightly turn golden then remove from heat immediately if you don’t wanna burn them 👌👌
  3. Use a strainer to separate the oil and garlic with shallots. Add shallots and garlic into the rib bowl with the remaining sauces and spices except white sugar, water and garnishes. Combine and marinate for about an hour.
  4. Heat a small pot over medium heat, add white sugar with 2 tbsp water. Don’t stir and let it get caramelized. (Be careful, it can be burnt easily or undercooked)
  5. Add in the marinated ribs and 300 ml water. Bring it to a boil and then keep it simmer until the sauce get thickened.
  6. Add another 300ml water and repeat the process until the ribs are soft and tender.
  7. Sprinkle onions and chili. Serve with hot steamed rice. Omg, I beg you to try this!!! ❤️
