Super Tender Pineapple Pork

I am a huge huge fan of pineapple! I love pineapple fried rice, pineapple juice, everything pineapple.

I made this pork recipe for dinner the other day and it came out so so tender, sweet and spicy. I decided to film and share this recipe with you. I hope you will like it!

You will need
    Pork marinade
  • 250 g pork shoulder, sliced into 0.5cm thick pieces
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp fish sauce
  • 1 1/2 tbsp tapioca flour (or cornstarch)
  • 1/2 tbsp honey
  • 1 tsp lemon juice
  • Pineapple sauce
  • 2 shallots
  • 2 garlic cloves
  • 1 chili (adjust to your taste)
  • 45 g pineapple (chopped)
  • 1 tbsp sugar
  • 1 tbsp sriracha (chili sauce)
  • 1 tbsp ketchup
  • 1 tbsp oyster sauce
  • 1/2 cup water
  • 1/2 tsp black pepper
  • A pinch of salt
  • Others
  • 100 g pineapple (chopped)
  • 20 g coriander (chopped)
  • Chili flakes (optional)
  • 1/2 tsp cornstarch
  • 1 tbsp water
  • Oil for frying
Instructions

    Place pork with the marinade ingredients into a bowl. Cover and let it sit for 30 mins.

    Add all the sauce ingredients into a food processor, pulse until it's smooth or almost smooth if you prefer. Set it aside.

    Heat a shallow pan or a wok over medium high heat, add oil to deep-fry the pork. Once oil is hot enough, add the pork and fry until it's golden brown. Transfer to a plate.

    Make a slurry by combining cornstarch and water. Set aside.

    Heat a frying pan over medium heat, pour in the pineapple sauce with pineapple chunks. Bring it to a boil.

    Stir in the slurry then add fried pork. Toss until the pork is coated with the sauce.

    Sprinkle chopped coriander and you can add chili flakes if you want it more spicy.
