Sweet And Sour Chicken Vegetables

This is my go-to whenever I feel I need to eat more and different vegetables at one time. It's sweet and sour just a perfect match with a bowl of rice. Do you think so?

You will need
  • 200 g chicken breast (sliced)
  • 60 g onion (sliced)
  • 70 g bell pepper (sliced)
  • 90 g broccoli
  • 60 g carrot (thinly sliced)
  • 70 g pineapple (cubed)
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp cornstarch
  • The sweet and sour sauce
  • 1/4 cup ketchup
  • 3 tbsp brown sugar
  • 2 tbsp rice vinegar
  • 1/2 tsp cornstarch
  • 1/4-1/2 tsp salt (adjust to your taste)
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (use soy sauce if you don't have)
  • 1/2 cup water
  • A bit of chili flakes for little kick
  • 3 garlic cloves (minced)
Instructions

    Place chicken in a bowl and add garlic powder, salt, pepper and cornstarch. Mix and set aside for about 20 mins.

    In the mean time, blanch broccoli in boiling water for 2 mins, blanch carrot for 2 minutes. Transfer to a plate and set aside.

    Heat a frying pan over medium heat, add 1 tbsp oil and place then chicken in. Cook until the chicken is golden. Transfer to a separate plate.

    Making the sauce by combining all the ingredients and pour in a fried chicken pan. Bring it to a boil, stir constantly until the sauce is thickened.

    Add onion, broccoli, bell pepper, carrot, pineapple and chicken into the pan. Toss well with the sauce and cook for about 2-3 minutes.

    Remove from heat and serve over rice. Enjoyyyy 😍
