Tamarind Spicy Shrimp Noodle Mix

Servings: 2
Ingredients
  • 100 g egg noodles (cooked, don’t over cook it)
  • 7-10 shrimps (cooked, I boiled with 2 slices of ginger)
  • 3 garlic cloves (minced)
  • 1 shallot (minced)
  • 10 g coriander (chopped)
  • 10 g basil (you can chop if prefer)
  • 1 chili (sliced)
  • 1 1/2 tbsp fish sauce (use soy sauce if you like)
  • 40 g tamarind
  • 1 tbsp brown sugar
  • 2 tsp samba oelek or chili paste (use less if you can’t eat spicy)
  • 2 tsp cooking oil
Instructions
  1. 1
Place tamarind in a bowl and pour in 1/2 cup hot water. Leave it for 10 mins.
  2. 2
Break the tamarind to separate the meat and seeds. Place a strainer over a bowl, pour the tamarind in and use the back of a spoon to crush. You get a tamarind water after this process. Set aside.
  3. 3
Heat a pan over medium heat, add oil. Once the oil is hot enough, stir in garlic and shallot. Cook until it’s golden.
  4. 4
Reduce the heat to low and pour in the tamarind water. Add fish sauce, brown sugar, chili sauce and 1/4 cup of water. Bring it to a simmer boil and remove from heat immediately.
  5. 5
Let it cool a bit then add in noodles, shrimps, coriander, basil and chili slices. Toss well.
  6. 6
Transfer to a serving plate and enjoyyyy, it’s fresh 🙂
