7-10 shrimps (cooked, I boiled with 2 slices of ginger)
3 garlic cloves (minced)
1 shallot (minced)
10g coriander (chopped)
10g basil (you can chop if prefer)
1 chili (sliced)
1 1/2tbsp fish sauce (use soy sauce if you like)
40g tamarind
1tbsp brown sugar
2tsp samba oelek or chili paste (use less if you can’t eat spicy)
2tsp cooking oil
Instructions
Place tamarind in a bowl and pour in 1/2 cup hot water. Leave it for 10 mins.
Break the tamarind to separate the meat and seeds. Place a strainer over a bowl, pour the tamarind in and use the back of a spoon to crush. You get a tamarind water after this process. Set aside.
Heat a pan over medium heat, add oil. Once the oil is hot enough, stir in garlic and shallot. Cook until it’s golden.
Reduce the heat to low and pour in the tamarind water. Add fish sauce, brown sugar, chili sauce and 1/4 cup of water. Bring it to a simmer boil and remove from heat immediately.
Let it cool a bit then add in noodles, shrimps, coriander, basil and chili slices. Toss well.
Transfer to a serving plate and enjoyyyy, it’s fresh 🙂
