Today’s banh mi recipe requires:

  • Meatballs
  • Banh mi sauce
  • Pickles

Banh mi sauce

Ingredients

  • 3 garlic cloves (minced)
  • 2 lemongrass (white part, minced)
  • 1 chili (minced, or less depends on how spicy you like)
  • 3 tbsp sugar
  • 3 tbsp ketchup
  • 1 tbsp sriracha
  • 2 tbsp fish sauce
  • 4 tbsp soy sauce
  • 14 tsp five spice powder
  • 14 cup water
  • 1 tbsp cooking oil

Method:

  1. Heat a small sauce pan over medium heat, add 1 tbsp oil with garlic, lemongrass and chili. Stir for 1-2 mins or until fragrant. 
  2. Add the remaining ingredients and bring it to a boil. 
  3. Cook until the sauce gets thickened. Remove from heat and let it cool down. 

Pickles

Ingredients

  • 250 grams carrot
  • 250 grams daikon
  • 2 1 ⁄2 tablespoons salt
  • 1 ⁄2 cups sugar
  • 1 cup water
  • 1 cup rice vinegar

Method

  1. Cut carrot and daikon into 4 cm long sticks. Put them in a mixing bowl with 2 1/2 tbsp salt. Use your hands to toss well until the salt is dissolved and you can bend a piece of daikon/carrot all the way over without it breaking. Set aside for 30 mins.
  2. Add sugar, water and vinegar in a small pot and bring it to a boil, immediately remove from heat. Let it cool down completely.
  3. Add cold water into the salted vegetable bowl, clean out the salt then squeeze and drain.
  4. Once the pickling liquid is ready, place the carrot and daikon tightly into a jar. Then pour the liquid to cover.
  5. Seal and put it in the fridge up to a month. The pickles should sit overnight before serving!
  6. You can add the pickles to your salads, spring rolls, sandwiches, noodle mix, banh mi ….

Meatballs

Ingredients

1 kg ground pork

5 shallots

4 garlic cloves

1/2 tsp five spice powder

1 tsp black pepper

1 tbsp condensed milk

2 tbsp oyster sauce

1 tbsp honey

1 tbsp sugar

3 tbsp oil

1 tbsp CHINSU fish sauce

1 tsp Msg (optional)

Method

Combine all the ingredients, cover and marinade for at least an hour.

Form into balls and air fry for 15 minutes at 200C

To make a BANH MI:

Drizzle the sauce onto the banh mi and then place coriander, meatballs, pickles, cucumber, sriracha …
